Head Sommelier 5* Deluxe Hotel East Sussex - £17000 Immediate Start Accommodation Available
JOB TITLE: HEAD SOMMELIER
PURPOSE AND SCOPE OF JOB: To organise and supervise the service of
refreshments as ordered to customers,
both resident and non-resident, using
good social skills and selling techniques.
MAIN DUTIES
1. To ensure that all Wine Staff are familiar with and have a working knowledge
of the Wine List.
2. To ensure that all Wine Staff know the range of drinks available and
understand the pricing.
3. To ensure that all Wine Staff are aware of, and comply with the Licensing
Laws.
4. To assist customers with their choice of wine or drink and to take the
appropriate orders.
5. To be actively involved in the training of Wine Staff and participate in any
training exercise.
6. To ensure that proper mis-en-place is prepared for each service.
7. To organise, supervise and assist with the service of beverages along with
the correct accompaniments, using the correct equipment and glasses, to
the standard laid down by the Restaurant Manager.
8. To ensure that correct handling, use, storage and cleaning of all liquor
service equipment.
9. To ensure that a tight control is kept on all stock used, and that all checks
are raised and processed correctly, and are either paid or charged to
account.
10. To study the advance business forecasts and programmes, and liaise with
the Restaurant Manager/Food and Beverage Office about any anticipated
problems or difficulties.

11. To be aware of all facilities in the Hotel, in case of customer queries.
12. To be aware of, and comply with the Hotels Policy on Fire, Health,
Hygiene and Training and co-operate in all training procedures.
13. To assist and advise as to the content of the Wine Lists, and offer any
advice as to particular wines on them.
14. To identity any sub-standard stock and ensure it is handled accordingly.
15. To assist in other areas of the Restaurant as needed.
Actively Training and Recording staff in the correct service of wine and beverages.
To Work alongside Head Chef to devise Harmonious Pairings of Food & Wine on the Menus
To Produce a Plan of how budget Shall be achieved
To Be Responsible for the Regular (Quartely) update , Addition, Subtraction Of Wines , Vintages etc.... on the Wine List. - whilst liasing with the Restaurant manager and the food and Beverage management
To Record , monitor and present a Clear Sales Mix Record to Food and Beverage management
To Create a preventative Cleaning plan and to Regularly Sevice of Equipment via respective Engineers.
To attend Wine Tastings by suppliers and to keep an up to date record of this .
To be more active in The management of the Cellar whilst liasing with Food and beverage management.
GENERAL RESPONSIBLITIES
1. To be aware of and comply with the Hotels Rules and Regulations.
2. To be aware of and comply with the Hotels policy on Health and Safety
at Work.
3. Carry out all duties in a safe manner, having regard to the health, safety and
welfare of self, other members of staff, guests and other persons on Hotel
premises.
4. To be polite at all times reporting any complaints to the Head of Department.
5. To report any suspicious incidents, substances, objects or characters
immediately to the Duty Manager.
6. To be smart at all times whilst on duty and wear the correct uniform. Personal
hygiene to be of the highest standard.
7. To act as a Sales Person, promoting the image of the Hotel at all times.
8. Report and hand over any lost property.
