Position Overview:

This position is concerned with the courteous and efficient service of Food and Beverage to guests in accordance with prescribed hotel policies and procedures.

The following responsibilities:

Responsibility for the running of wine service in the restaurant. If not on duty, it is the responsibility of the Sommelier to ensure that those who are on shift are fully briefed on the standards and routines of the restaurant.

Responsibility for the efficient running of the cellar and wine stocks. This includes:

· Liasing with the F&B Controller on the ordering of wine
· Liasing with the Wine Consultant on the ordering of fine wine
· Liasing with central stores to ensure that sufficient stock of fast moving lines (house champagne etc) is being held to full Colette\'s requirements.
· Ensuring that all wines shown on the list are available
· Ensuring that the cellar is kept neat and well laid out to facilitate monthly stock take
· Liasing with the Wine Consultant to ensure that vintages etc are current as they should be on the list.
· Assisting with the monthly stock take\'s as required
