Hiya,
I am an Australian living in london on 4 year Ancestry visa. I have just turned 30 and i am interested in finding out how it is possible to work in Europe, particularly France, Italy and Poland. Can you point me in the right direction? I am assuming I have to contact ech nations embassy. Does my ancestry visa di anything special for me?

Being this site is designed for people going to the UK, not elsewhere in Europe, I'll be brief but I know France has a working holidaymaker scheme similar to that in the UK; the other countries I don't know what they offer.
The short answer is yes, check the embassy for each country. Being you're on an ancestry visa, which does almost nothing for you when it comes to working elsewhere in Europe, one perk should be the ability to apply from within the UK rather than through embassies in Canberra.
Depending upon your eagerness, one option is to wait a few years until you've satisfied the requirements to obtain British citizenship (5 years of residency under the ancestry visa, apply for indefinite leave to remain, after one year of holding ILR apply for citizenship). If you did that, you'd be able to move and work freely anywhere in the EU.
Note that if you leave the UK for a long time your ability to obtain ILR will be severely hampered.
